Easy Bourbon Chicken

this is a recipe I have made on and off since living in our first home! I’ve over the years perfected it for our little family, and it has def become a family favorite! Don’t let the name scare you away! You can make this easily without bourbon as well. Which I’ve done numerous times!

one of the great things about this recipe, is that the alternative ingredients make this whole food approved! I’m about 3 weeks out from my 3rd body building competition, so i’m currently only allowed whole foods, and let me tell you.. I don’t know if you’ve ever looked for whole food dips and sauces before but there are close to NONE! This was just perfect recipe to help me get my chicken into my diet while remaining “whole food”. Much less “dry” and bland and added a tinge of sweetness to my day which I miss so much these days!

one more thing I think is important to note with this recipe is that it is very much “to taste”.. I will list approx. quantities, but ultimately, it is really up to your own pallet and the pallet of your family!

Ingredients:

2-3 {almost} cooked chicken diced {Serves our family of 4 usually, maybe a bit left over, I stress “almost cooked” as it will continue to cook with the glaze. I cook till internal temp is about 130-140 degrees, the glaze reduction will cook the rest of the way.}

2 tablespoons bourbon {optional}

1-2 cup honey {or brown sugar or both} – {to taste}

1 cup water

1/4 cup Soy Sauce

1 tablespoons Apple Cider Vinegar

1 tablespoons Lemon Juice

Directions:

  1. In a medium to large sauce pan, mix all ingredients over medium heat.
  2. let mixture simmer, taste regularly to check flavor. if too vinegary/salty, add honey or brown sugar. if too sweet, add lemon juice, soy sauce or vinegar.
  3. once taste is as desired, add your diced chicken.
  4. let entire pan reduce, stirring regularly to coat chicken and allow chicken to absorb the flavors, turning them brownsih
  5. once sauce turns to a glaze consistency, remove from heat and enjoy!

Again, this is very much up to you and your family and how you like your asian style chicken! I prefer mine sweeter. 😉 Also- enjoy this priceless food photography on a paper plate.. My plates are in the dishwasher! Ha!
